Peru
Peru's coffee-growing regions spread across the eastern Andean slopes facing the Amazon, in areas such as Chanchamayo, Cajamarca, and Cusco, at elevations of 1,200 to 1,900 meters. Blessed with steep mountain terrain, abundant rainfall, and diverse ecosystems, this region is home to countless smallholder farmers who continue traditional farming methods free of chemical fertilizers and pesticides, making Peru one of South America's leading producers of organic coffee. Cherries ripen slowly in the shade of shade trees, grown in harmony with the surrounding natural environment.
Processing is primarily washed, and careful washing with clean mountain water produces a clear cup free of off-flavors. The cup shows gentle notes of chocolate and nuts, with a restrained, smooth acidity and a mellow body. Bolivia
Bolivia's coffee is grown in the steep valleys of the Yungas region near the capital La Paz. At altitudes ranging from 1,700 to over 2,300 meters — among the highest coffee-growing zones in the world — the Andes' sharp day-night temperature swings and intense UV exposure slowly concentrate sugar in the cherries. Poor road access and small, scattered farms make large-scale production impractical, but that very isolation has preserved traditional cultivation largely untouched by outside influence.
Washed processing dominates, with Caturra and Typica the most widely grown varieties. The cup is clean with minimal off-notes, offering floral aromatics, a mellow sweetness, and a delicate, well-balanced acidity. Because production is small and rarely reaches international markets in volume, Bolivian coffee carries an added sense of discovery whenever a lot is found.
