Question 1

How does a natural-process SL28 compare to a washed SL34 in terms of acidity, fruit character, and structure?

Accepted Answer

A direct comparison is inherently confounded: you are changing both cultivar (SL28 vs. SL34) and process (natural vs. washed). Processing will usually account for more of the cup-style difference than the SL28/SL34 distinction alone.

- **Acidity:** A natural-process SL28 often presents acidity as broader, riper, and more integrated—think jammy berry or wine-like impressions rather than sharply delineated citrus. A washed SL34 is more likely to show cleaner, more explicit acidity, with a firmer, more linear structure. SL28 can have striking acidity when washed, but natural processing may soften its apparent precision.

- **Fruit character:** Natural SL28 commonly emphasizes fermented or dried-fruit character: berry compote, tropical fruit, grape, and sometimes boozy notes if fermentation is pronounced. Washed SL34 generally expresses fruit with greater separation and transparency—often cleaner stone-fruit, citrus, or blackcurrant-like notes, depending on origin and roast.

- **Structure and body:** The natural SL28 will typically feel fuller, rounder, and more syrupy, with a lingering sweet finish and potentially heavier fermentation-derived texture. The washed SL34 should tend toward a cleaner palate, more defined sweetness, lighter-to-medium body, and a more orderly finish. Its structure may feel more tea-like or crystalline rather than plush.

For a meaningful varietal comparison, the best control would be SL28 and SL34 from the same region, harvest, producer, roast profile, and processing method. Without those controls, it is more accurate to describe this as a **natural-versus-washed comparison with cultivar influence**, not a pure SL28-versus-SL34 comparison.

Question 2

How does the natural process usually show up in the cup? I’ve heard it can taste fruitier, but I’m not sure how to describe that in a review.

Accepted Answer

Natural-process coffees often present fruit in a more ripe, jammy, or wine-like way than washed coffees. In a review, you might describe notes such as berry, tropical fruit, dried fruit, fermented fruit, or a syrupy sweetness. The body can also feel fuller and the acidity softer or more rounded.

By contrast, a washed coffee often tastes cleaner and more clearly structured: the fruit may come across as crisp plum, citrus, or apple rather than jam or fruit liqueur.

A useful review structure could be:

> “The cup had a ripe, dried-fruit sweetness with a fuller, syrupy body. The fruit character felt more jammy than crisp, with a lingering sweet finish.”

If you enjoy the plum, caramel, and dried-fruit profile of the Guatemala from Stockfleths, you may also appreciate a natural coffee—especially one where the fruit is more pronounced and winey.

Question 3

I’m looking for coffee beans as a birthday gift for someone who loves fruity natural-process coffees. Any recommendations around ¥3,000?

Accepted Answer

I don’t have a confirmed natural-process coffee in the available listings, so I wouldn’t want to recommend a specific bean that might miss their preference.

For a ¥3,000 birthday gift, look for a **natural-process single-origin coffee** with notes such as **berry, tropical fruit, strawberry, or winey sweetness**. A **150–200g bag** is usually a nice gift size.

When you give it, you could say:
**“I picked this because I know you love those really fruity, natural-process coffees—hope it gives you lots of berry-like sweetness.”**

Question 4

I’m especially curious about natural-process coffees—do Japanese roasters tend to roast them lighter to highlight the fruitiness? Which Tokyo roasters would you recommend for that style?

Accepted Answer

Japanese roasters often do favor lighter roasts for natural-process coffees when the goal is to showcase berry-like fruit, tropical sweetness, and fermentation-derived complexity. That said, it is not a rule: some will use a medium roast to make a natural coffee feel rounder, sweeter, and easier to enjoy with Japan’s café culture—especially alongside pastries or as a mellow hand-drip.

For naturals, look for descriptions such as *light roast*, *fruity*, *berry*, *winey*, *jammy*, or *fermenty*. Brewing with a slightly lower temperature and a gentle pour can help preserve clarity while avoiding excessive ferment-like intensity.

I don’t have enough information in the current context to recommend specific Tokyo roasters for natural-process coffees, so I wouldn’t want to invent names. Among the listed coffees, the Guatemala offered by Stockfleths is washed rather than natural, so it would likely present a cleaner profile—plum, caramel, and dried fruit—rather than the more overtly fruit-forward character you are seeking.
