Question 1

I usually enjoy light roasts, but I’m still not sure how to describe what I like. How would an Ethiopian natural taste different from a washed Kenyan?

Accepted Answer

A washed Kenyan often tastes cleaner and more structured: think bright acidity, crisp fruit, and a tea-like finish. The Kenya Specialty from 常盤珈琲焙煎所 赤羽店 is a light roast and washed, so it may be a useful reference if you enjoy clarity and lively acidity.

An Ethiopian natural, by contrast, is often more fruit-forward and aromatic, with a rounder, sometimes jammy or wine-like impression. Where a washed Kenyan can feel precise and sparkling, a natural Ethiopian can feel sweeter, fuller, and more expressive.

If you like light roasts for their clean, vivid character, try a washed Kenyan. If you find yourself wanting more fragrant fruit and sweetness, a natural Ethiopian may be worth exploring.

Question 2

How does a natural-process SL28 compare to a washed SL34 in terms of acidity, fruit character, and structure?

Accepted Answer

A direct comparison is inherently confounded: you are changing both cultivar (SL28 vs. SL34) and process (natural vs. washed). Processing will usually account for more of the cup-style difference than the SL28/SL34 distinction alone.

- **Acidity:** A natural-process SL28 often presents acidity as broader, riper, and more integrated—think jammy berry or wine-like impressions rather than sharply delineated citrus. A washed SL34 is more likely to show cleaner, more explicit acidity, with a firmer, more linear structure. SL28 can have striking acidity when washed, but natural processing may soften its apparent precision.

- **Fruit character:** Natural SL28 commonly emphasizes fermented or dried-fruit character: berry compote, tropical fruit, grape, and sometimes boozy notes if fermentation is pronounced. Washed SL34 generally expresses fruit with greater separation and transparency—often cleaner stone-fruit, citrus, or blackcurrant-like notes, depending on origin and roast.

- **Structure and body:** The natural SL28 will typically feel fuller, rounder, and more syrupy, with a lingering sweet finish and potentially heavier fermentation-derived texture. The washed SL34 should tend toward a cleaner palate, more defined sweetness, lighter-to-medium body, and a more orderly finish. Its structure may feel more tea-like or crystalline rather than plush.

For a meaningful varietal comparison, the best control would be SL28 and SL34 from the same region, harvest, producer, roast profile, and processing method. Without those controls, it is more accurate to describe this as a **natural-versus-washed comparison with cultivar influence**, not a pure SL28-versus-SL34 comparison.

Question 3

How does the natural process usually show up in the cup? I’ve heard it can taste fruitier, but I’m not sure how to describe that in a review.

Accepted Answer

Natural-process coffees often present fruit in a more ripe, jammy, or wine-like way than washed coffees. In a review, you might describe notes such as berry, tropical fruit, dried fruit, fermented fruit, or a syrupy sweetness. The body can also feel fuller and the acidity softer or more rounded.

By contrast, a washed coffee often tastes cleaner and more clearly structured: the fruit may come across as crisp plum, citrus, or apple rather than jam or fruit liqueur.

A useful review structure could be:

> “The cup had a ripe, dried-fruit sweetness with a fuller, syrupy body. The fruit character felt more jammy than crisp, with a lingering sweet finish.”

If you enjoy the plum, caramel, and dried-fruit profile of the Guatemala from Stockfleths, you may also appreciate a natural coffee—especially one where the fruit is more pronounced and winey.

Question 4

What exactly is a light roast coffee? I’m not a big fan of sour coffee, so is it still something a beginner like me could enjoy?

Accepted Answer

A light roast is coffee roasted for a shorter time, so it keeps more of the bean’s original character. It can taste brighter and more lively—sometimes a little like citrus, berries, or tart fruit.

That doesn’t always mean it will taste sharply sour. Think of the difference between a sweet ripe apple and a squeeze of lemon: both have brightness, but one is much gentler. Brewing method and the specific bean make a big difference.

For a beginner who dislikes sour coffee, I’d start with a medium roast or a blend described as sweet. If you do try a light roast, choose one with sweet or fruit-like notes and brew it a little less strong. The Kenya Specialty from Tokiwa Coffee Roastery Akabane is a light roast, so it may be an interesting option if you’re curious—but expect a brighter cup than a medium roast.

Question 5

What variety or lot specification is available for Kenya Specialty?

Accepted Answer

No variety, lot, or grading information is supplied. Only Kenya origin, washed process, and light roast are confirmed.
